Happy Summer Y'all!!!  

We are busy being not very busy...there is alot going on but since it's spread out through the week and not all smashed into one day it's not a crazy and much more manageable // it is glorious! 

Anyway, I picked up a few pounds of local rhubarb the other day and since today is "hump day" I decided that my Mr. needed a fresh baked cake {as I can't eat it, it truly is for his enjoyment} and so referred to my very favorite most amazing recipe for rhubarb coffee cake. 
I have posted this recipe before but it's THAT good it needs to be posted again! 

‘Big Crumb’ Coffeecake with Rhubarb
Adapted from The New York Times 6/6/07
Not rhubarb season? Don’t fret. I think this cake would be amazing with a blueberry, raspberry, sour cherry or any other tangy fruit filling you can think of. Simply adjust the sugar level accordingly–most of these will need far less than rhubarb does to make them palatable.

Time: 1 1/2 hours, plus cooling

Butter for greasing pan

For the rhubarb filling:
1/2 pound rhubarb, trimmed
1/4 cup sugar
2 teaspoons cornstarch
1/2 teaspoon ground ginger

For the crumbs:
1/3 cup dark brown sugar
1/3 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon salt
1/2 cup melted butter
1 3/4 cups cake flour (I was out and used all-purpose and it worked great)

For the cake:
1/3 cup sour cream
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
1 cup cake flour (ditto on the all-purpose flour–worked just fine)
1/2 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons softened butter, cut into 8 pieces.

1. Preheat oven to 325 degrees. Grease an 8-inch-square baking pan. For filling, slice rhubarb 1/2 inch thick and toss with, cornstarch and ginger. Set aside.

2. To make crumbs, in a large bowl, whisk together sugars, spices, salt and butter until smooth. Stir in flour with a spatula. It will look like a solid dough.

3. To prepare cake, in a small bowl, stir together the sour cream, egg, egg yolk and vanilla. Using a mixer fitted with paddle attachment, mix together flour, sugar, baking soda, baking powder and salt. Add butter and a spoonful of sour cream mixture and mix on medium speed until flour is moistened. Increase speed and beat for 30 seconds. Add remaining sour cream mixture in two batches, beating for 20 seconds after each addition, and scraping down the sides of bowl with a spatula. Scoop out about 1/2 cup batter and set aside.

4. Scrape remaining batter into prepared pan. Spoon rhubarb over batter. Dollop set-aside batter over rhubarb; it does not have to be even.

5. Using your fingers, break topping mixture into big crumbs, about 1/2 inch to 3/4 inch in size. They do not have to be uniform, but make sure most are around that size. Sprinkle over cake. Bake cake until a toothpick inserted into center comes out clean of batter (it might be moist from rhubarb), 45 to 55 minutes. Cool completely before serving.

Yield: 6 to 8 servings.

: Summertime To:Do List :

I posted this photo on my Instagram the other day and got an overwhelming response from it so I thought I would share it here too! 

First off, this is not an original idea, someone else that is much more creative than I thought of it, but I loved it and thought you would too.  

The boys and I just sat down one day and thought of all the fun things that Summertime is to them...hence the "water gun fight" & "fly a kite" ones and I'm sure you can tell which ones I have part in "keep routine" & "back to school shopping" :: It was super easy to do and fun for the boys to look forward to checking something off of our Summertime list!

Hope you're getting lots of fun in these Summer days and enjoying the little moments, like eating an ice cream cone or having a water fight! 

I'm off to get some errands done while the boys are at VBS :: Hoping to make the 3 hours stretch to more like 5 :: Happy day Lovelies!

: Camping 2011 :

We were blessed to go away camping {in my parents trailer} for the better portion of a week with two other couples and their kids. We stayed at a KOA just south of the Border in a little sleepy town called Lynden, WA.
It's a beautiful town with fabulous antique shops and great people
Finally after years of seeing this house, I took the time to take a photo of it. It's located on Front Street and it's my all time favorite home in Lynden...although their are plenty more I "ooo" and "ahhh" over!

Oh, and more of this!
Then the G+G came down and played a round of golf, apparently Cole was winning {see photo}!
AND....a WHOLE lot of this went on....ahhhh camping, now that's the life!


Thanks for the great memories V&K + D&L ---- We're so happy we went with all of you! What a blast!

So this morning was the first official day of school for Jacob, it was a good day...would have been better if we didn't wake up at 8.10 am!!! When the heck do we ever sleep in!?!?! AHHHH, a little mental trying to get the three of us up and out to make it to school {we have to drive 15 minutes as we're still living out of catchment} for 8.30 am, but we did it and we weren't late!

All that matters is that JJ had a great time and that he did, he was only there for an hour but can't wait to do more! God has been SO good to our family, we're truly blessed beyond measure and my cup overflows!

I'll be back with more "Back to School" memories and photos, but right now we're off to parent teacher interviews! I guess it's officially started! Unbelievable! {sorry for the overuse of the exclamation mark!!!!!!!!!}

: Date Night :

As I mentioned before, Mr. L's got the beetle running so one night last week we went out for a bite of dinner and a cruise to the beach.
What a beautiful sunset and place we get to live!

To end the night we enjoyed a hot starbucks, it already felt like fall when we got out to the beetle! Ahhh, it's all about the little things!

I'm off to do work for CC and get some more things organized for school, it's all happening so fast! Exciting times, exciting times!

: Beach Days :

We've had some pretty great beach days this summer! Even thought we've had really very few hot Summer like days, we've taken full advantage of them when they were here {today it's rainy here}

Hoping to have at least one more beach day before school starts, but if this weather pattern continues then it probably won't happen! Oh well, at least it's almost Fall and my most favorite time of the year!

: Phew! :

We had a crazy busy weekend! After we got back from camping, we had a day or so to recover {aka: get organized} for the full weekend ahead!

Saturday started off with the boys being picked up to spend the day in Vancouver with my SIL & In-Laws at the PNE...Thanks again Mum & Dad & Jenn for taking them!

Then we got ready and headed off to see my second Cousin marry his bride

It was an outside garden wedding, which was stunning but unbelievably hot!!!
Beautiful ceremony done by my Uncle Roger {My Dad's older brother} and my Cousin, who is the grooms Grandpa and Uncle, so you can imagine the personal touches that made the ceremony so beautiful!

Here we are, it was near the end of the night, we were just about to leave...hence the crazy faces! HA!!! No need for any explanation, really! {thanks to my brother Jordan for taking these stellar photos!}

Sunday morning we were up bright and early to head off to church, which was awesome! We're really blessed to go to an unbelievable church and serve such and amazing God.

Right after church we headed to Starbucks for a quick drink and a treat for the boys then on to the VW show that was just minutes from our church...it was a beautiful day but again super hot!

Paul and I have been together for 12 years and missed the VW show one time in those 12 years, so going back in our Beetle for the first time and with our boys made the day SO memorable and special for us both!
Once we were finished up at the VW show we headed to the water park to cool off then home to rest the boys and then freshen up and head out to our friends place down by the beach. What a great night we had there, great food, fellowship, and friends. And more sunshine to boot!
We had a fabulously full weekend, and I think I may still be recovering as of this morning {Tuesday!}!!!

I may be back later on to do my Tuesday post as my computer took the whole day to download my 400+ photos from my camera yesterday, hence the reason this post wasn't up yesterday!

Hope you all had a great weekend too and that the last week prior to school is filled with all things lovely and that you're not being driven nuts from the lack of schedule ;)

: Beach Cabin :

We had a great opportunity to get away for a much needed break {just after we moved into the basement} to spend some time at our friends beach cabin...it's such an inviting place {see photo below of what we're greeted with}

Such a beautiful piece of property, it's been in their family for 30+ years!
We didn't have the most fabulous weather the whole time, but even the rain couldn't hamper us going out and "adventurizing" on the beach. We found mussels, crabs, purple starfish and the list goes on! We were playing hands on with God's creation and it was SO fun!

One afternoon we ventured out to the local street market and Rock Falls...


I'll be back with the rest of the trip tomorrow. Today we're camping, enjoying more of the beautiful creation we're surrounded with!

Oh and I'm saying a prayer today for Jack Layton's family, so sad that cancer stole him too early.
